alhora, es guanya en salut i regularitat de la qualitat, a m\u00e9s de contribuir a simplificar les elaboracions culin\u00e0ries. Tamb\u00e9 concebem la baixa temperatura com un estil de vida mitjan\u00e7ant el qual es protegeixen o es preserven i es potencien aspectes positius de l\u2019alimentaci\u00f3 com la sostenibilitat o la racionalitat. Es defineix la cuina a baixa temperatura com l\u2019\u00fas de coccions suaus (habitualment de menys de 100\u00baC), encara que nosaltres preferim referir-nos a temperatures de cocci\u00f3 properes a les que es pretenen obtenir en l\u2019interior del producte \u2013 el que anomenem \u2018a cor de
